蝴蝶酥源自20世紀的法國因其外形西方稱之為「棕櫚樹葉」也是蝴蝶酥的英文名Palmier的意思
不過其實還可以追溯到中世紀中東地區的酥皮點心,這在鄂圖曼土耳其帝國的多層麵包時已開始出現了蝴蝶酥的雛形。其後來到近代,蝴蝶酥來到上海落地生根,成為經典的海派點心。到六、七十年代,大塊的蝴蝶酥,成為香港冰室的特色餅食,酥鬆美味,成為地道美食。到今時今日
